Vegan Vegetable Soup
This is so delicious, you would not know that there is no meat in this dish.

1 large sweet potato cubed
2 large carrots sliced
1 can white beans in tomato sauce or without
16c vegetable broth
2c sweet red bell peppers cubed
2 caramelized onions 4tbsp tomato paste Salt, pepper and garlic to taste
Season your stock with salt, pepper and fresh garlic minced. Add tomato paste. Add carrots. cook for 10 minutes and then add the sweet potato as you do not want the sweet potato to get mushy. Add the remaining vegetables and beans with the red pepper. Once the sweet potato is tender but still firm, you can blend about 2c of the vegetables into a puree. Pour the puree back to the pot.
Fry the onions until they are caramelized and then puree that as well. Add to the soup. Serve with your favorite bread.
