Stuffed Mushroom Caps

The health benefits of mushrooms include relief from high cholesterol levels, breast cancer, prostate cancer, and diabetes. It also helps in weight loss, and increases the strength of your immune system. Almost all of us are familiar with mushrooms and their miraculous, beneficial powers.

Stuffed Mushroom Caps

8 large button Mushrooms with stems removed (keep stems)
1/4c shaved parmesan (save a little for the top)
1/4c finely chopped red pepper
1/4c finely chopped onion
Finely chop the mushroom stems
1/4c fine bread crumbs
Two scallions chopped up

Add the raw mushroom caps to a baking dish and season with salt and pepper. Fry all remaining ingredients in a little oil until tender.  Stuff the mushroom caps and top with the extra cheese on top.  Simply place the stuffed caps in a 400 degree oven for 20 minutes until the mushroom caps are tender.  Serve as a side dish.
