Carrot Cake Cheesecake

For the carrot cake

One large carrot grated finely
2 eggs
4 tbsp. maple syrup
1/2 cup coconut oil or canola oil. I used coconut oil
1c all purpose flour
pinch of salt
2 tsp. cinnamon
1/4 tsp. of ground cloves
1 tsp baking powder
1tsp baking soda

For The Cheesecake

One package of Philadelphia Cream Cheese1/4c sour cream
1tbsp vanilla
1tbsp butter
3/4c sugar

Mix the cake mixture in one bowl just until it comes together and the cream cheese mixture in another. You start with half of the cake mixture on the bottom and put a few dallops of the cream cheese mixture over the top. Do not mix.  Add remaining cake mixture and the last of the dallops of cream cheese mixture over the top.  Bake in a 350 degree oven for one hour.

For the Icing and decoration

1/2 package cream cheese
2c confectioners sugar
1/4c butter
2tsp vanilla and a dash of almond extract for flavor
Add extra confectioners sugar if you like thicker icing

Allow to cool.  Use a piping bag to decorate it so that it looks fluffy.  Drizzle with chocolate sauce and put a few cubes of chocolate on the top for a perfect end touch to the cake
