Apple Cheesecake

The health benefits of apples include improved digestion, reduced risk of a variety of cancers, heart disease, diabetes, and stroke. Apples provide prevention of stomach disorders, constipation, gallstones, anemia, liver disorders, diabetes, eye disorders, rheumatism, gout, and much more.

For the filling
10 apples
1tbsp cinnamon
pinch of salt
4tbsp water
4tbsp sugar
pinch of nutmeg

For the pastry

4c flour
2c unsalted butter
1/4tsp salt
1/2c sour cream
3tbsp sugar

For the Cream Cheese Filling

1 package of Philadelphia Cream Cheese
1c sugar
1tbsp vanilla
3 eggs
3tbsp flour

Butter a large round spring form baking pan.  Peel and thinly slice the apples into a medium pot. Add remaining ingredients and cool over medium until apples are soft.  Coarsely mash the apples and set aside to cool.

For the pastry, add all ingredients and use a pastry cutter to cut in the butter and all ingredients.  Kneed the dough once the butter is blended into the mixture well.  Freeze the dough for one hour – covered in plastic wrap.

Use half the dough and grate it on the course grate side onto the bottom of the pan.  Add the entire amount of the cream cheese smoothly  over top of the layer of grated pastry dough.  Add the cooled apples over the top of the cream cheese layer.  Finally grate the remainder of the dough over the top of the apple mixture.  Bake at 350 degree oven for about 40 minutes and the top is bubbly and browned.  This cake is even better the next day.
